Things You'll Need:
- Chicken Breast or breast tenders
- your favorite double-dip fried chicken recipe (or try the one here)
- Fat-Draining plate lined with coffee filters or paper towels

Step 1
Begin by thawing your chicken out thoroughly. Preparation and organization are the secret to making fried chicken without making a mess. Place your chicken breast tenders on an aluminum baking sheet and they should be thawed within 15 minutes, covered wiht plastic wrap or paper towels at room temperature.

Step 2
Gather the ingredients for your double-dip fried chicken recipe. Mix your eggs and or buttermilk in one bowl and sift together your flour and or cornstarch and seasonings in another. You don't really need a recipe, you really can't go wrong when you make fried chicken.

Prepare a surface for draining the fat, I prefer to use a stack of coffee filters on a dinner plate. I also keep a baking dish in the oven, set to 200 degrees so that after it's drained, the chicken stays warm.

Place a reasonable amount of Crisco or vegetable oil in a large skillet and allow it to begin to heat up.

Facing your frying pan, arrange your workspace from one side to the other, with the following components in this order; Fat-draining plate, frying pan, flour mixture, egg or buttermilk mixture, and thawed chicken breast.

Use one hand for the thawed chicken and egg mixture. Use the other hand for the flour mixture, and to place the chicken in and out of the pan.

Before turning over the chicken, use a long handled spoon to drizzle hot oil on top of the chicken, so that none of the flour falls off into the oil while you're turning it over.

Place each fried chicken breast tender on the fat-draining plate as soon as it's removed from the heat. You can shake on additional seasoning while the outside still looks moist.

When the next round of chicken is finished frying, put the first round in the oven to stay warm and bring the second batch to the draining plate.
