Things You'll Need:
- 1 (1 pound) sweet potato
- 2 8oz packages cream cheese softened
- 1 cup honey
- 2 eggs
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 2 teaspoons vanilla extract

Step 1
Boil sweet potato its skin for about an hour or until it is soft when poked with a fork. Place in ice water before removing skin. Once you have skinned it, place it in a bowl and mash it with the honey and spices

Next, add the two packages of cream cheese along with the eggs and vanilla. Blend by hand until everything is well mixed. For a fluffier pie, use an electric mixer and beat on high for 1 minute.

Pour batter into prepared pan and bake for 50 minutes at 350 degrees, or until a toothpick inserted in the center comes out clean. The pie may puff up and then sink back down as it cooks. Let the pie cool before releasing the side of the pan. Let the pie chill one hour before serving. To cover the appearance of cracks on top, spread a thin lay of whipped cream over the pie before serving.
