Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup + 2 tbsp melted margarine
  • 1/2 cup chopped onions
  • 1 can cream of chicken soup
  • 1 cup shredded colby cheese (you can substitute your favorite cheese)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 bag frozen shredded potatoes
  1. Step 1

    Pre-heat oven to 350 degrees.
In a mixer place all of your ingredients EXCEPT the potatoes. Keep your potatoes in the freezer until this step is completed. Mix on low speed for 1 minute until well blended.

  2. Step 2

Remove potatoes from freezer and add to sauce mix. Mix on low to medium speed for 1-2 minutes. Do not over mix, the potatoes should remain whole shredded pieces. If you over mix the potatoes will break and become mushy.

  3. Step 3

Spray a casserole dish with cooking spray and add potatoes. Do not press potatoes into dish. Using a large spoon gently break the larger pieces of mix into smaller pieces. spread evenly in your pan without pressing down, the top of the casserole should not be flat.

  4. Step 4

Place in oven pre-heated to 350 degrees. Bake uncovered for approximately 25 minutes. Casserole will be golden brown on top when finished. Do not cover casserole after removing from oven, the steam will cause the casserole to become watery and mushy.
