Sweet potato casserole is a great side dish for any meal but no Thanksgiving dinner would be complete without it.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • sweet potatoes
  • orange juice
  • cinnamon
  • sugar
  • brown sugar
  • flour
  • marshmallows or walnuts
  • butter or margarine
  1. Step 1

    Boil 4 largish sweet potatoes. Once they have cooled, remove the jackets. Preheat oven to 350 degrees.
    In a large bowl, add sweet potatoes and 1/4 cup of margarine or butter and mash well. Add 1 cup of sugar and 1-1/2 tsp. cinnamon. Add 1/4 cup of flour. Add 1/4 c. of orange juice. Mix well and put the mixture into a casserole baking dish.

  2. Step 2

    TOPPINGS
    Marshmallow Topping:
    My children like sweet potato casserole with marshmallows. You can add a layer of marshmallows (mini marshmallows are easier to work with) before putting the sweet potato casserole in the oven.
    Delicious walnut or pecan topping:
    Mix 1-1/2 c. brown sugar and 1/3 cup of flour well. Mix with 1/2 cup of melted margarine or butter. Once it's mixed well, add 1 cup of walnuts or pecans. Spread mixture over the top of the sweet potato casserole and bake.

  3. Step 3

    Cook at 350 degrees for 30 minutes.

Tips & Warnings
  • The cooked dish comes out very hot and cools slowly so give it a few minutes to cool before putting it on the table.
