Hanukkah is celebrated December 22nd thru December 29th this year. One of the traditional foods made during this celebration is potato latkes. In this article you will learn how to make easy potato latkes.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 5 medium potatoes
  • 1 small onion
  • 2 large eggs beaten
  • 2 tablespoons of flour
  • 1 teaspoon of salt
  • oil as needed
  • kitchen utensils such as grater, strainer, stove and frying pan
  1. Step 1

Assemble all ingredients and kitchen utensils together.

  2. Step 2

Wash and peel potatoes,(I peel the skins off, but you can leave them on if you prefer) Using kitchen grater, grate the potatoes.

  3. Step 3

Drain potatoes in a strainer. Try to remove as much liquid as possible. I dab potatoes with paper towels to remove as much moisture as possible.

  4. Step 4

Grate the onion and mix the onion with the potatoes, the 2 large eggs beaten, 2 tablespoons of flour and 1 teaspoon of salt. Mix well.

  5. Step 5

Add oil to frying pan, not alot but enough to cover bottom of skillet. Turn stove top burner on medium heat.

  6. Step 6

Using clean washed hands make small, thin patties out of the potato mixture. Place patties in frying pan and fry in the oil until golden brown, on both sides. I only turn patties once while cooking them.

  7. Step 7

Remove potato patties from frying pan or skillet, using a slotted spatula and place on a plate lined with paper towels, to drain.

  8. Step 8

Serve with sour cream and applesauce.

Tips & Warnings
  • These are very tasty and relatively easy to make.
  • As always use caution when using a hot stove top. Don't fry on high heat it will cause the oil to get to hot and could result in splattering and possible burns or possibly start a fire. Always use hot pads and oven mitts when handling hot objects. Especially if you use a cast iron skillet. The handles of cast iron skillets can get very hot. Use care and caution when using the grater so you don't cut yourself.

on 12/21/2008 Ooooh, I wish my grandma was still here to make these for me...they were the best. I might have to give it a try myself. Thanks for some good memories.
