How to Make Creamy Cucumbers

This cucumber recipe is so tasty and is the perfect summer dish. Add an extra fresh flavor by using your garden grown cucumbers and onions.

Instructions

Things You'll Need:

  • 3 cucumbers
  • 1 large onion
  • 3 tbsp sugar
  • 3 tbsp vinegar
  • 2 tsp salt
  • mayo
  1. Step 1

    Peel the cucumbers and slice them into very thin slices.

  2. Step 2

    Peel the onion and slice it into thin slices also.

  3. Step 3

    Combine the sliced cucumbers and sliced onions in a bowl. Add the salt to the cucumbers and onions.

  4. Step 4

    Add just enough water to the salted cucumbers and onions to cover them.

  5. Step 5

    Cover the bowl and leave the cucumbers and onions in the water for at least an hour. Longer is better.

  6. Step 6

    Drain the cucumbers and onions.

  7. Step 7

    Mix the vinegar, sugar and mayo to taste. Start with 1-2 tbsp of the mayo and increase to your preference.

  8. Step 8

    Add the cucumbers and onions to the vinegar, sugar and mayo mixture. Mix everything together. Refrigerate the creamy cucumbers before serving.

  9. Step 9

    Serve and enjoy! This is an excellent side dish for cookouts.

Tips & Warnings
  • This dish is great as a leftover too.
  • Be sure to keep cold due to the mayo in the recipe.
