How to Make Easy Breakfast Burritos

Breakfast burritos are great for breakfast on the run. This recipe is fast and simple to make for those rushed mornings. For even greater convenience make ahead of time and store in the refrigerator or freeze.

Instructions

Things You'll Need:

  • Eggs
  • Cheese
  • Butter
  • Tater Tots
  • Precooked Sausage Patties
  1. Step 1

    Melt butter in frying pan on stove. You can use as little as a few tbs or as much as 1/2 cup. I admit I am a butter addict so I used a 1/2 cup of butter.

  2. Step 2

    Add 1/2 to a whole bag of tater tots to the melted butter. As the tots cook use spatula to break up the tots into crumbles. Allow the crumbled tots to cook until golden brown and slightly crispy on each side.

  3. Step 3

    Microwave the sausage patties and cut into bite size pieces. Toss in with the tater tots. I used 3 patties for my recipe. Feel free to add in as much as you want.

  4. Step 4

    Add eggs one at a time to the potato sausage mixture. Be sure to stir each egg into the mixture quickly to create scrambled eggs. I used 4 eggs but you can use as many as you want.

  5. Step 5

    Once the eggs are cooked, spread out the mixture evenly in the pan. Sprinkle shredded cheese over the entire mixture. Cover with a lid until the cheese melts.

  6. Step 6

    Scoop the mixture into warmed tortillas and roll up. Burritos can be wrapped in foil if not eaten right away.

Tips & Warnings
  • Salsa and other diced vegetables can be added as desired.
  • Warm tortillas in microwave with a small cup of water for 10 seconds.
