Make this scrumptious quick and easy Taco Salad using the left overs from my How to Make Beef Enchiladas recipe. With the leftover rice, seasoned beef, shredded cheese, salad and a couple of other ingredients you can enjoy a delicious Taco Salad for lunch or dinner the following day.

Instructions

Things You'll Need:

  • Tostito style corn chips
  • Salad
  • Rice
  • Seasoned Beef
  • Shredded Mexican Cheese
  • Salad Dressing
  1. Step 1

    After making the beef enchiladas, I usually mix the left over rice with the seasoned ground beef and place in the refrigerator. Once you are ready to make the Taco Salad remove the beef and rice mixture and heat in the microwave to warm.

  2. Step 2

    Place the Tostitos style corn chips in the bottom of a salad bowl. Using the left over salad, cover the corn chips. Place additional chips around the salad at the sides of the bowl.

  3. Step 3

    Put a few spoonfuls of the heated beef and rice mixture on top of the salad and sprinkle with the leftover shredded Mexican cheese.

  4. Step 4

    Place a spoonful of the leftover salsa on top and use your favorite salad dressing. I think Ranch tastes best, but use the dressing of your choice.
