This is a perfect appetizer, bruschetta topping, salad or sandwich addition. None of that peeling the peppers deal... Peppers, Garlic, Olive Oil, Salt and Pepper... bada-boom bada-bing!

Instructions

Things You'll Need:

  • Assorted Colored Peppers
  • Few cloves of Garlic
  • Olive Oil
  • Salt and Pepper
  1. Step 1

    Preheat oven to 425 degrees. Okay, we call this roasted peppers but actually we're just going to place them in the oven on high heat. Cut the peppers in half and remove the seeds. You can then cut the peppers to the size you desire. Usually I just quarter the peppers. They will shrivel some after roasting.

  2. Step 2

    Peel the garlic and chop. Adjust the amount according to the amount of garlic you like and the amount of peppers you are roasting.

  3. Step 3

    Place the peppers and the garlic into a bowl and drizzle some olive oil over them. Sprinkle with Kosher salt and pepper. Mix all the ingredients thoroughly so that all the parts of the peppers are coated in oil.

  4. Step 4

    Bake in the oven (425 degrees) for about 30 minutes or until the peppers start to get charred.

  5. Step 5
     

    These can be served with thin sliced toasted Italian bread and mini fresh mozzarella balls.
