The best way to celebrate any season is by cooking with the fresh fruits and vegetables that the season offers! Here are some ways to incorporate squash into your Fall and Winter diet!

Instructions

Things You'll Need:

  • A good chef's knife
  • Butternut Squash
  • Acorn Squash
  • Butter
  • Garlic
  • Brown Sugar
  • Sherry
  1. Step 1

    First of all, invest in a good chef's knife, or sharpen the one you have. Squash can be very hard to cut through raw. The ideas below can be used with any squash of your choice: my favorite are butternut squash and acorn squash.

  2. Step 2

    Grill it! Cut your squash in half, drizzle with butter and garlic, and throw on the barbecue or in the oven until the top is slightly darkened. Grilling squash brings out the natural sweetness without losing any of the nutrients. Yum!

  3. Step 3

    Sautee it! Cut the squash into 1 inch cubes, throw into a pan with butter and a bit of brown sugar and cover over medium heat until you can cut through the squash with a fork (just like checking a baked potato). Once the squash is tender, add a capful of sherry to deglaze and enhance the flavor. Sautee for another minute or so, and remove from heat. This is my favorite way to make squash!

  4. Step 4

    Stew it! Squash makes an excellent addition to your favorite vegetable or chicken soup. Simply cut it into small cubes and add to the broth along with some carrots, potatoes, and celery. I like to add chicken and navy beans for some extra protein. Delish!

Tips & Warnings
  • Be careful when cutting! This is a very hard vegetable and you need to take care that the knife doesn't slip and cut you in the process.
