Things You'll Need:
- 2 pounds of chicken wings
- oil for frying
- 1/3 cup of mayonnaise
- 1/3 cup of buttermilk or plain yogurt
- 1/3 cup of crumbled blue cheese
- 3 tbsp hot pepper sauce
- 1 tbsp cider vinegar

Step 1
Pour oil into large heavy saucepan of 1 1/2-incehs. Over medium heat, bring oil to 375 cooking thermometer.

while oil is getting heated, cut off chicken wing tips and discard. Cut wings in half at joint; pat dry. Carefully place half of wings in hot oil and fry, gently stirring occasionally, until crisp and golden, about 9 mins. With slotted spoon, transfer wings to a wire rack or paper towels to drain then return to oil and cook remaining wings.

While first batch of chicken is cooking, in small bowl combine mayonnaise, butter milk and blue cheese.

While second batch of wings is cooking, in large skillet melt butter; stir in hot sauce and vinegar. Add fried wings; toss to coat. The longer wings are in sauce, the spicer they become. ( Serve wings with blue cheese dip if desire)
