Don't waste all of that leftover turkey from Thanksgiving. With a little creativity and a few pantry staples you can turn your leftovers into lunch for the week after Thanksgiving by making an easy turkey salad. This can be served over a bed of greens or with pita bread for a delicious, nutritious meal.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • leftover turkey
  • 1/2 cup Mayonnaise
  • 1 tsp celery flakes
  • 1/2 tsp salt
  • 1/2 tsp poultry seasoning
  • 1/8 tsp onion flakes
  • Pepper to taste
  1. Step 1

Pick the leftover turkey from the bone. You need at least 2 cups of shredded turkey for this recipe, but it is a good idea to go ahead and clean the bird all at one time. The turkey that you have leftover can be stored in the fridge in a plastic bag or other container.

  2. Step 2

Mix together the turkey, mayo, celery flakes, salt, poultry seasoning, dried onion flakes and pepper to taste.

  3. Step 3

Store in the fridge for several hours before serving to allow the flavors to mix.

  4. Step 4

Serve over a bed of lettuce or with pita or other bread.

Tips & Warnings
  • This recipe can be turned into chicken salad by substituting chicken for the turkey.

on 12/5/2008 Sure sounds delicious. We don't eat big quantities of turkey here, but if I can get the butcher to cut up a frozen one into quarters, I could try this.

on 11/30/2008 Sounds yummy and I thought I was tired of turkey. Maybe I will use this to get rid of that last little bit lurking in the fridge. Thanks!
