How to Make Juicy & Tender Southern Style Chicken Fried Steak

Things You'll Need:

  • Round steak that has been tenderized or venison steak.
  • 2 eggs
  • 1 cup of milk
  • all purpose flour
  • salt & pepper
  • vegetable oil
  • cast iron skillet
  • fork (for mixing)
  • tongs (for meat)
  1. Step 1

    Choose your meat well. If using round steak, the prime choice for real chicken fried steak, have it tenderized by the butcher if it isn't pre-tenderized or if you do not own a tenderizer. This usually has no added cost. Venison steaks, either steaks or backstrap can be used. If venison is cooked properly there is no need to tenderize it.

  2. Step 2

    Preparing your meat and setting up. Cut your steak into single portions if not done by the butcher. Tenderize, if not done by the butcher. Salt and pepper both sides of meat.
    Put skillet on med-high flame and add enough cooking oil to cook meat; about 2-3 cups.
    Put 2-3 cups of flour in metal pie dish or something similar.
    Lightly, salt & pepper flour.
    Mix well eggs & milk in a separate pie dish or bowl.

  3. Step 3

    Dip each piece of steak first in flour, then in the milk & egg mixture. Repeat a second time, and flour one last time. Place in hot oil. (You may want to test oil by dropping a pinch of flour in it. It should cook immediately.)Repeat the process with each piece of meat. A larger skillet will hold 4 average pieces of steak. When each piece of meat turns golden brown, turn and cook until both sides are golden brown, then remove from skillet.

Tips & Warnings
  • Use a couple of disposable metal pie pans for easy clean up.
  • Use a fork to mix milk & eggs.
  • Have a platter lined with paper towel for placing meat on as taken from the skillet.
  • Usally, served with mashed or creamed potatoes, white gravey, choice of bread, and either a salad or green beans. Also, makes a great hot sandwich.
  • Watch your oil. You do not want the oil or meat to burn. If, it seems to be cooking too fast, cut the fire down to a little.
  • If cooking a larger amount, add to other ingrediants as needed.
  • Remember to turn off the fire when finished.
