How to Make Peanut/Butterscotch Bark

After making peppermint bark year after year, I experimented with this combination last year and it was quite a hit--sweet and salty Butterscotch Bark.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • a large butterscotch bar or a bag of butterscotch chips
  • honey roasted peanuts
  1. Step 1

    Line 2 cookie sheets with parchment or waxed paper, and place in the freezer to chill while you are making the candy.

  2. Step 2

    Shave the butterscotch bar. If you're using chips there's no prep. Melt the butterscotch in a double boiler-or carefully monitor it's melting on the defrost cycle of your microwave. The butterscotch may still looked formed, but if it's melted to a stir able stage, that breaks up the form, it's ready.

  3. Step 3

    Add 4 oz of honey roasted peanuts. This is not an exact science--I had no recipe and did it to my liking--as you should.

  4. Step 4

    Pour immediately onto the prepared cookie sheets, spreading it to a thin layer.

  5. Step 5

    Chill in freezer for 25-30 minutes. remove, break it up and pack in storage freezer bags, for gifting or serving during the holiday season.

Tips & Warnings
  • Make sure the butterscotch is melted--a it takes several minutes in both the stove method and the defrost cycle, microwave method.
  • Be diligent in monitoring the melting for doneness, as burning can occur.
