Things You'll Need:
- 1 Head of cabbage
- 1-lb. of chopped meat
- Toothpicks
- 1 can of Tomato Sauce
- salt/pepper to taste
- Oregano
- Parsley
- 1-lb. of rice
- 1/2 cup of grated cheese

Step 1
Blanche the cabbage. You would do this by taking the whole head of cabbage and putting into a pot of water. Be sure to cover the top of the cabbage when filling the pot with water and allowing a few inches from the to.

Step 2
Cook the cabbage on a medium flame and be sure to keep on checking it every 15 mins. You would check the cabbage by taking a fork to poke and see how tender (soft) it is getting. You don't want to make it get too soft. It should be ready in approximately 30-35 minutes depending on how big the head of cabbage is. Naturally the bigger the head of cabbage the longer it will take to get tender. Be sure to not allow it to get mushy because then you will not be able to fill and roll the leaves in step 4.

Step 3
In a frying pan brown the meat and drain the fat. Once the meat is browned and you are done draining the fat from the pan add salt and pepper to taste and 1 tsp of oregano. Mix well and set aside.

In a separate saucepan make the rice as you normally would or follow the directions on the box. When the rice is done simply add to the meat in the sauce pan along with 1/4 cup of grated cheese and mix well. (for all the cheese lovers feel free to try different types of cheeses such as Locatelli, Pecorino Romano, Mozzarella, Feta etc...)

Step 5
Cut the bottom nub off of the head of the cabbage and remove a few leaves. Be sure to keep them whole and lay them so that they resemble little bowls by arranging on their backsides. You will be able to fill with the meat and rice mixture and roll. Once they are rolled you can place them with the lip (the ends) meet face down in a baking dish. If you feel that the way you rolled them that they will open feel free to use tooth picks to hold close. Just be sure to remove before serving to avoid injury.

Once you have filled the baking dish with all of the filled and rolled cabbage leaves and they are arranged comfortably pour the tomato sauce on top along with the other 1/4 cup of grated cheese and put in a pre-heated 350 degree oven and bake for 30 mins. When cheese is brown and bubbly it's ready. Put as much sauce and cheese as you prefer this is a great recipe to "play" with to your liking. Enjoy!
