Step 1
Procedure: Cut the pineapple 3/4 from the top Preheat oven to 425 F.
In a small bowl place in Pecans, corn sugar, salt and oil. Mix together and place on a baking sheet that is well sprayed. -
Step 2
Put your tray of Pecans into the oven for no more than five minutes. (Depending on your over - it may be a shorter time - keep an eye on those nuts! It is always good to stare at those nuts. You want roasted nuts but not burnt).

Step 3
Remove the Pineapple from the shell to form a small Pineapple bowl.
Chop up the pineapple - small cut ( making sure you remove the woody hearts)
Place the pineapple in the small bowl you used for the pecans. Add one teaspoon of honey and a pinch of cinnamon. Mix in a quarter cup of Mayo or make your own cream dressing - this is what I do. Add a pinch of white pepper. Mix all together and place in the fridge. Note: If you like baby shrimp (like me) then I would place in baby shrimp as well. Also a ounce of Grand Mariner.
Now - take an array of wild salad that has Radicao, baby dandelion leafs and romaine, You can usually find this blend in any store now a days. Add a teaspoon of Virgin Olive Oil ( doesn't have to be virgin - I just said that). Toss lightly.
Add salad into the pineapple shell. Do not press down ( but you can press down on me - if you like )
Now lay down -no -no- I mean lay the pineapple mixture lightly on top (ummm...on top). Now add half of your roasted candy pecans with a quarter slice of Pineapple as a garnish. To make this more colourful add to sticks of cinnamon and cross them.
You can also add a wild baby strawberry.
Place your Pineapple Boat on your most decorative plate - preferably a coloured plate. Such as a red plate. If you are very creative you can make a cloth napkin into a star piece and place the Pineapple Salad Boat within the star piece.
Now, to add the other half of the candy roasted pecans around the plate.
