Instructions

    • 1

Heat the oven to 350 F. Scrub the potatoes. Do not remove skin.

    • 2

Fill a large pot half full of water. Bring it to a boil over high heat. After water is boiling, add potatoes. Reduce the heat to medium-low. Cover the pot with a lid and simmer for 20 to 30 minutes, or until potatoes are "fork tender.” When the potatoes are tender, remove them from the water and allow them to cool.

    • 3

Make the glaze by melting the butter in a small pot over low heat. Stir in the brown sugar, water and cinnamon. Using a wire whisk, stir ingredients together until smooth.

    • 4

Remove the skins from the potatoes when they are cool enough to handle. Cut each potato into ½-inch slices.

    • 5

Combine the potatoes and glaze in a baking dish. Cover dish with a lid or aluminum foil. Bake for 30 minutes. While baking, occasionally spoon glaze over potatoes.

    • 6

Remove the baking dish from the oven after 30 minutes. Pour the potatoes and glaze into an oven-proof baking dish. Place a cup or two of marshmallows over the potatoes. Put the oven-proof serving dish in the oven uncovered for about five minutes or until marshmallows are golden brown.
