I got this recipe from a friend of mine. She brought some into the Job with her . She wouldn't tell anyone what was in it until the close of the day. Then she handed us all a recipe card. We had all been guessing and discussing it all day. It was really really good.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1--15 ounce can of pinto beans, rinsed and drained
  • 1 cup of butter or margarine, melted
  • 1 tablespoon vanilla extract
  • 7 and 1/2 cups of powdered sugar
  • 1 cup of chopped English or Black walnuts
  • A microwave safe dish
  • A 9 inch square pan, coat
  • with non-stick cooking spray

Press the cocoa, pinto bean mixture into the 9 inch square pan, that is coated with the non-stick cooking spray. Be sure to coat the bottom and the sides of the 9 inch dish.
Cover the dish and put it in the refrigerator.
Let it sit in the refrigerator until the fudge is good and firm.
Cut the surprise fudge into 1 inch pieces.
Let in set in the air for a little while.
This will let it soften a little bit, then cut through the fudge again and put it back into the refrigerator.
When it has firmed back up, take the fudge out of the refrigerator.
Loosen the pieces of fudge from the pan.
Put the fudge on a glass cake plate. Stacking in a circular fashion.
Put the cake plate lid on the fudge.

Tips & Warnings
  • If the weather is hot store the fudge in the refrigerator.

on 11/16/2008 I guess this is the same concept as "bean pie" with a much nicer name. I'm thrilled to think that I might actually get my husband to eat beans - I must try this, right away! Thanks.
