How to Make Deep fried corn fritters

Do you like fritters?
My husband practically begged me to make him some the other night.
So who am I to refuse. Besides I like them, too. And we hadn't had any for awhile. They are delicious!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • A 15 ounce can of cream corn
  • 1 cup of flour
  • 1 cup of yellow cornmeal
  • 1/2 cup of sugar
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1/2 cup of SOUR milk
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • A large mixing bowl
  • A large deep iron skillet
  • A 32 ounce bottle of oil
  1. Step 1

    Put the iron skillet on the stove, over medium heat and add the oil.
    Open the can of cream corn and put it in the mixing bowl.
    Add the 2 beaten eggs and SOUR milk and stir.
    Add the flour, cornmeal and the 1/2 cup of sugar and stir.
    The oil should be hot enough to use by now.

  2. Step 2

    Mix the baking soda and baking powder into the cream corn mixture. always wait until the last minute to add the baking soda and baking powder.
    Drop by teaspoonfuls, for small fritters, and by tablespoonfuls for big corn fritters.

  3. Step 3

    When they are ready to turn, some of the fritters will turn over on their own. the rest you will have to turn yourself.
    When they are golden brown, They are ready to remove fron the hot oil.
    Place the finished corn fritters on a platter that is lined with paper towel, to let them drain.

Tips & Warnings
  • This mixture will make between 30 to 36 corn fritters.
  • They are good reheated in the microwave for about 15 to 20 seconds.
  • You can also eat them cold if you want to.
  • Please be careful when you are working around hot oil or grease.
  • Be careful they are pretty hot when they just come out of the deep fryer.
  • Be careful not to splash any hot oil on you when you drop spoonfuls of batter into the skillet.

on 11/16/2008 Deep fried corn fritters were a staple of my childhood. It's been so long since I had one, maybe my diet can budge a little for a batch (or two, lol--they are so tasty!).
