Things You'll Need:
- 2 - 9” Single Pie Crust
- 3 lg Sweet Potatos (raw)
- 2 Sticks of Butter
- 1 Cup Sugar
- 2 - Large Eggs
- 1 cup Evaporated Milk
- 1Tbsp Vanilla Extract

Step 1
Boil potatoesWash the sweet potatoes making sure all dirt is removed from the skin. Put them in a large pot and boil until tender.

While the sweet potatoes are cooking, use the mixer to blend the butter with the sugar, eggs, milk and vanilla extract.

Test the potatoes by sticking a fork in them. If the fork goes all the way in, then they are ready. Pour the hot water off of the potatoes and put them in cold water for about 5 minutes to cool.

Step 4
Peel potatoesPull the skin off the potatoes and place them in a clean mixing bowl. The skin should be easy to pull off or shed. Just rub firmly with fore thumb to break the skin and pull it off.

Step 5
Blend the sugar mixture with the cooked sweet potatoes.

Step 6
Pour the potato mixture into the pie shells and cook for 1 hour at 350 degrees Fahrenheit.

on 11/29/2008 Masondixon, thanks for stopping by. I NEVER buy canned yams. I've never bought canned potatoes of any kind in my life so if you ever get one of my pies, it's from scratch (except the crust. I cheat and buy the shells. LOL).
