Things You'll Need:
- 2 cups flour
- 2 tsp. baking powder
- 1 1/2 tsp baking soda
- 2 tsp cinnimon
- 1/2 tsp salt
- 2 cups sugar
- 1 1/2 cups salad oil
- 4 large whole eggs
- 2 cups coarsly grated carrots
- 8 1/2 oz can crushed pineapple - drained
- 1/2 cup chopped nuts
- FROSTING:
- 1/2 cup butter
- 8 oz cream cheese
- 1 pound of powdered sugar
- 1 teaspoon vanilla

Step 1
Preheat oven to 350 degrees
Grease and flour two round cake pans -
Step 2
Sift together: Flour, baking powder, baking soda, cinnamon and salt.
Set aside. -
Step 3
Cream together 2 cups sugar, 1 1/2 cups salad oil and 4 large whole eggs.
Combine dry ingredients with the liquid mixture. -
Step 4
Stir in: Carrots, Crushed Pineapple and nuts. Stir to combine and pour batter into prepared pans. Bake 30 to 40 minutes on the center oven rack. Cake is done when a toothpick comes out "clean"

Cream Cheese Frosting:
Cream 1/2 cup butter, an 8 ounce package of cream cheese and 1 teaspoon vanilla. Beat in 1 pound of powdered sugar. If too thick, add milk a little at a time until the correct consistancy is achieved. -
Step 6
Optional: 1 cup of shredded coconut or walnuts or both together are a really good addition!
