Easy Farmer's Omelet is an all in one dish that feeds a family. The recipe is easy to follow and you do not have to work over the stove.

Instructions

Things You'll Need:

  • 6 eggs
  • 5 tbs water
  • 1/4 tsp celery salt
  • 1/8 tsp white pepper
  • 1 large baked potato
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1/2 cup diced cooked ham
  • 2 tbs oil or margarine
  • cast iron frying pan
  • large bowl
  1. Step 1

    In a large bowl, beat the eggs with cold water. Then add celery salt and white pepper; blend together. Meanwhile pre-heat the oven to 350 degrees with the oven rack placed in the middle.

  2. Step 2

    Grease the cast iron frying pan with margarine or vegetable oil. Wash a potato and bake in microwave oven till done. Cool and dice into small pieces.

  3. Step 3

    Saute onions and green peppers in frying pan. Add the diced potato and diced cooked ham. Toss and spread mixture evenly over the bottom of the cast iron frying pan.

  4. Step 4

    Pour the egg mixture over all the other ingredients. Place the frying pan in the heated oven and bake for 30 minutes. You can slice the omelet into wedges or just scoop it out with a spoon.
