How to make an Easy Farmer's Omelet

Things You'll Need
- 6 eggs
- 5 tablespoons cold water
- 1/4 teaspoon celery salt
- 1/8 teaspoon white pepper
- 1 large baking potato
- 1/4 cup chopped green pepper
- 1/4 cup chopped onion
- 1/2 cup diced cooked ham
- 2 tablespoons oil or margarine
- cast iron frying pan

Place your oven rack in the middle of your oven. Preheat the oven to 350 degrees. Grease the cast iron frying pan with margarine or vegetable oil.

Crack the eggs into a large bowl, add the cold water and beat. Add celery salt and white pepper to the eggs, and blend together.

Rinse the potato well then pat it dry with a paper towel. Puncture it with a fork several times. Microwave it for about six minutes at 50 percent power. Check the potato to see if it is cooked through. If not, microwave it again for about 30 seconds and test again. When the potato is cooked through, allow it to cool, then dice it into small pieces.

Saute onions and green peppers in frying pan. Add the diced potato and diced cooked ham. Toss and spread mixture evenly over the bottom of the cast iron frying pan.

Pour the egg mixture over all the other ingredients. Place the frying pan in the heated oven and bake for 30 minutes. You can slice the omelet into wedges or just scoop it out with a spoon.
