Nacho Turkey Casserole is a simple recipe that gives turkey a whole other taste. This is a great way to use up the small pieces of left over turkey from Thanksgiving.

Instructions

Things You'll Need:

  • 1 - 14 oz bag tortilla chips
  • 2 - 15+1/2 oz can re-fried beans
  • 1 - 11 oz can corn
  • roasted turkey cut in small pieces
  • 1 jar salsa
  • 8 oz Monterey jack cheese shredded
  • jalapeno peppers (optional)
  • large casserole dish
  1. Step 1

    In a large casserole dish, place tortilla chips on the bottom making a double layer of tortilla chips. Then with a spoon, dollop the re-fried beans over the chips; even out as much a possible without breaking the chips. Open a can of corn and drain the liquid. Then evenly sprinkle the drained corn kernels over the re-fried beans in the casserole dish.

  2. Step 2

    With a sharp knife slice the turkey meat into small pieces and evenly spread them in casserole dish over the corn. Pour a jar of salsa over turkey meat and top everything with grated Monterey jack cheese.

  3. Step 3

    Put the casserole dish in a pre-heated oven of 350 degrees on the middle rack. Bake the casserole for 35 minutes. If cheese begins to burn, cover the casserole dish with aluminum foil.

Tips & Warnings
  • Can also serve with sour cream.
