Use quality ingredients. Better ingredients make better cookies.

Don't beat the chocolate chips into the dough. Use a spoon to fold them in instead. This will keep the chips from breaking into pieces.

Let the dough rest for 36 hours. Cover the dough after mixing and put it in the fridge for a couple of days.

Bake a test cookie. Put one cookie on the baking sheet and bake it for the recommended time. if the cookie is under-cooked or over-cooked, adjust the baking time and try again. If the cookie is too runny, add 1/4 cup of flour to the mix before trying a new cookie. Once you have the correct baking time and flour amount write it down on your recipe for next time.
