How to Make Mediterranean Pita Sandwiches

A colorful mixture of chick peas, carrots, onions and cucumber are complimented with a yummy garlic-cilantro dressing. Serve as a side salad or in a heart-healthy whole wheat pita. Yield:Makes 4 servings

Instructions

Things You'll Need:

  • 1. 1 cup plain fat-free yogurt
  • 2. 1 tablespoon chopped fresh cilantro
  • 3. 2 gloves garlic, minced
  • 4. 1 teaspoon lemon juice
  • 5. 1 can chickpeas (15 ounces), rinsed and drained
  • 6.1 can artichoke hearts (14 ounces, rinsed, drained and coarsely chopped
  • 7. 1&1/2 cups thinly sliced cucumber halves
  • 8.1/2 cup shredded carrot
  • 9.1/2 cup chopped green onions
  • 10. 4 rounds whole wheat pita bread, cut in half
  1. Step 1

    Combine, yogurt, cilantro, garlic and lemon juice in small bowl.

  2. Step 2

    Combine chickpeas, artichoke hearts, cucumbers, carrots and green onions in medium bowl.

  3. Step 3

    Stir in yogurt mixture until well blended. Divide cucumber mixture among pita halves.
