How to make a tasty peanut brittle WITHOUT
THE PEANUT. A great treat, for those that can't eat peanuts, but love peanut brittle.

Difficulty: Moderately Challenging
Instructions

Things You'll Need:

  • 2 cups sugar
  • 1 cup Karo syrup (light)
  • 2 cups sunflower seeds
  • 3 tablespoons butter, not oleo !!
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla
  • 1/2 cup water
  1. Step 1

    Bring water, sugar and Karo to a boil.
    Boil until candy thermometer reads 260 degrees.
    Stir constantly! Don't want it to stick.

  2. Step 2
    Sunflower
     
    Sunflower

    Add sunflower seeds, keep stirring, cook on moderate heat until you have 295 degrees. This is going to take a little time so have patience.
    Keep stirring, when you have reached 295 degrees, remove from heat, and add butter, vanilla and baking soda.

  3. Step 3
    Pour
     
    Pour

    Stir quick and well, it will be foamy, work quickly.
    Pour onto a well buttered large cookie sheet.
    Butter the item you use to spread with too!!
    Cool, and break into pieces.

  4. Step 4

    Store in container with wax paper in between layers.

Tips & Warnings
  • I use roasted, salted sunflower seeds, but you can use unsalted or raw.
  • If you use raw they have to be added before the 295 degrees. It is quicker to use roasted seeds.
  • This mix when poured onto a cookie sheet is VERY Hot!!
  • Work quickly, pull with 2 forks to get as thin as you like.
