Is there a better way to eat raisins?

This is a very rich, old-fashioned pie. I recommend one piece per cold winter day.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1 c. raisins
  • 1 c. sugar, divided
  • 1 c. water
  • pinch of salt
  • 2 Tbsp flour
  • 1 c. sour cream
  • 2 egg yolks
  • 1/2 tsp vanilla
  • pie crust (unbaked)
  • meringue for one pie
  1. Step 1

Simmer the following together for five minutes: raising, 1/2 c sugar, water, and a pinch of salt.

  2. Step 2

Mix the remaining 1/2 c sugar and flour. Add to raisin mixture and cook for five minutes.

  3. Step 3

Beat egg yolks; mix with sour cream. Add to raisin mixture and cook slowly for 5-10 minutes.

  4. Step 4

Remove from heat, add vanilla and allow to cool slightly. Pour into a pie crust, top with meringue, and bake according to meringue instructions until the meringue is browned. Cool completely before eating.
