How to Make An Easy Chicken Gumbo

This delicious soup, that always highlights okra, is an easy and healthy choice.

Instructions

Things You'll Need:

  • 3 tablespoons butter
  • 1 large onion, finely chopped
  • 4 cups of chicken broth
  • 1 green pepper, finely chopped
  • 1 cup of fresh okra, sliced
  • 1 1/2 cups canned tomatoes and juice
  • 1 cup diced cooked chicken
  • 1/2 cup cooked rice
  • salt and papper to taste
  1. Step 1

    In a heavy saucepan, melt the butter.

    Sauté the onion in the butter until it is transparent.

  2. Step 2

    Add the chicken broth, peppers, okra, and tomatoes.

    Bring to a boil and simmer until the vegetables are cooked through.

  3. Step 3

    Add the chicken and rice and reheat.

    Add salt and pepper to taste.

    Serve. Enjoy!
