I know I've already heard it, Green Tomato Pie. That doesn't sound good. But seriously it is.
I had abundance of green tomatoes when the first frost hit so I needed to do something with them. I had asked around and heard about Green Tomato pie. I couldn't do the typical pie as my elderly client can not have anything that has seeds in it so I had to come up with an alternative. I hope you like my Green Tomato Apple Pie recipe.

Instructions

Things You'll Need:

  • 1 1/3 Cups sugar
  • 6-7 Tablespoons flour
  • 1 1/3 Teaspoons salt
  • 1 Tablespoon Apple pie spice
  • 3 Cups Juiced tomatoes
  • 3 Cups Apple slices
  • 5 Tablespoons Lemon juice
  • 1 1/3 Tablespoons butter/margarine.
  1. Step 1

    Like I said I had to do the untypical thing with a pie, I had to juice the tomatoes. My grandson knows my elderly clients and loved helping me make it for them. We started by putting them in the microwave for 5 minutes to soften them up to put in the ricer.

    My grandson then riced the tomatoes.

    We ended up with 4 cups but only needed 3 cups to fill the crust.

    I always take the easy way and buy my crust. If you are good at it go for it. It's been so long since I've made my own. Buying them is just easier.

  5. Step 5

    Cut your apple slices and put them in the crust.

  6. Step 6

    Mix together sugar,flour, salt, apple pie spice, lemon juice and mix it in with your tomato juice. Make sure the flour is well mixed.
    Pour it over your apple slices and dot with butter/margarine.

  7. Step 7

    Put your top pie crust on and cut your design in the top.

  8. Step 8

    Bake in 425 degree oven for 35-45 minutes. I let mine get a little to brown. It was a first timers mistake :+)

  9. Step 9

    Enjoy a slice or 2. It really is good.

Tips & Warnings
  • Ovens vary keep a nose out for those spices cooking.
  • Share it with your friends cause you will want to eat it all. I'm taking some to my mom and clients tomorrow.
  • Usually I'd say you could serve the pie warm but be warned it will run a bit, it was better texture wise when it cooled and had a chance to set up.
