Perhaps the easiest and most accessible egg substitute is a plain old banana. This works great in baked goods. Use about 1/2 a banana, mashed up a little, for one egg in sweet baked recipes.

Another egg replacer that may be hiding in your kitchen is applesauce. The individual size cups are perfect. About 3 tablespoons of applesauce per one egg called for in cookies, cakes, and other baked goods works great.

Another easy and healthy egg substitute is ground flax seed. Use one tablespoon of ground flax seeds with three tablespoons of water. This substitute works best in dense baked goods like bran muffins, oatmeal cookies, and so on.

A non-perishable egg substitute is a basic mixture of one tablespoon of cornstarch and two tablespoons of water. Mix together and use in place of one egg. A pre-prepared egg replacer called Ener-G is also available in health food and grocery stores.

If you tend to cook with tofu, keep a package of silken tofu on hand. 1/4 of a cup of blended silken tofu per egg is a great replacer.
