Cranberries are always a New England favorite. This Cranberry Quick Bread is so easy to make you'll have everyone begging for the recipe! Start with a box mix & the inside has a surprise cream-cheese filling!
This delicious bread is terrific for Thanksgiving, Christmas, brunches or buffets. It can be made ahead and freezes well ~ keep several on hand for when you have to "bring a little something" for quick get-togethers! You can also use a different flavor box mix!

Instructions

Things You'll Need:

  • 2 packages cream cheese (3oz), softened; either regular or light
  • 1/3 cup sugar
  • 1 Tbl. flour
  • 1 egg
  • 1 Tsp. grated orange peel
  • 1 slightly beaten egg
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1 7 oz) package Quick Nut Bread, Cranberry flavor or flavor of your choice
  1. Step 1

    Combine cream cheese, sugar and flour. Beat in first egg then orange peel. Set mixture aside.

  2. Step 2

    Combine slightly beaten egg, orange juice and water. Add quick bread mix, stirring until moistened.

  3. Step 3

    Turn 2/3 of mixture into a greased and floured 9x5x3 loaf pan. Pour cream cheese mixture over top. Spoon on remaining batter. Sprinkle sugar over top, if desired.

  4. Step 4

    Bake at 350 for 1 hour. Cool for 10 min. Remove from pan. Can be frozen.

  • Any flavor Quick Bread Mix can be used.
  • 9 x 5 x 3 inch loaf pan
  • Makes one loaf
