Things You'll Need:
- Loaf Pans
- 1 1/2 c. sugar
- 1 2/3 c. flour
- 1/4 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. cloves, ground
- 1 tsp. nutmeg
- 2 eggs, well beaten
- 1/2 c. oil
- 1/2 c. water
- 1 c. pumpkin (fresh)
- 1/2 c. walnuts, chopped
-
Step 1
Begin by gathering all the ingredients and cooking supply's needed for the recipe. First, mix all dry ingredients together in a large metal or wooden mixing bowl. Then add eggs, oil, water and pumpkin.
Consider mixing the entire batch by hand. Mixing by hand gives for a better whole texture vs. using a blender. -
Step 2
Beat/mix the ingredients until well blended. You may want to pre-chop the pumpkin in advance of combining. Add in the nuts and mix by hand until well blended.
-
Step 3
Lightly grease and flour loaf pans. Be sure to discard the excess flour from the pan before pouring in the batter. Slowly pour in the batter, using a circular motion. Bake at 350, mid oven rack for 1 hour. This recipe should make two loafs.

on 11/5/2008 Good idea to avoid waste. I have a bunch of pumpkins in my house for decoration around this time of year and it never occurred to me to do anything with them except let my daughter and her friends take them outside and have fun bashing them with bats and throwing them on the sidewalk...lol
