How to make boarding house sweet potatoes

A delicious sweet potato casserole for thanksgiving or anytime. This is my version of the sweet potatoes from Hopkin's Boarding House in Pensacola, Florida

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 5 large sweet potatoes
  • 1/2 cup sugar
  • 1 stick of butter
  • 1/2 cup coconut
  • 1/3 cup raisins
  • 1/2 t grated orange peel
  • 1 1/2 cup marshmallows
  • electric mixer
  • casserole dish
  1. Step 1

    Bake and peel sweet potatoes. While they are still hot mix with all other ingredients except marshmallows with an electric mixer.

  2. Step 2

    Put into a casserole dish and top with marshmallows.

  3. Step 3

    Broil until marshmallows are brown. About 5 minutes.

Tips & Warnings
  • Watch carefully while browning marshmallows they burn very easily.
