Make this easy chicken casserole as written or make susbtitutions for things you have on hand - the versatility of this recipe makes it perfect for an easy, throw-together dinner!

Instructions

Things You'll Need:

  • 3 boneless, skinless chicken breast halves
  • 1 can of condensed cream of mushroom soup
  • 1/2 cup of mayonnaise
  • 4 cups of frozen broccoli
  • 2 cups of shredded cheddar cheese
  • 1 cup of seasoned bread crumbs
  • salt, other seasonings to taste
  • one casserole dish
  1. Step 1

    Preheat oven to 325 degrees. Boil chicken and let cool; cut or tear into bite-sized pieces.

  2. Step 2

    In a large bowl, mix condensed cream of mushroom soup, mayonnaise, and one cup of cheese. Add broccoli and cooled chicken and mix well. (Also add preferred seasonings at this point - paprika, garlic, salt, pepper, etc.)

  3. Step 3

    Spoon entire mixture into a casserole dish. Spread seasoned breadcrumbs and remaning 1 cup of cheese on top and cover with tin foil. Bake at 325 degrees for approximately 25 minutes. Remove tinfoil and bake another 10 minutes, or until cheese melts and crumbs brown. Remove and enjoy!

Tips & Warnings
  • If you dont have seasoned breadcrumbs, you can add approximately 2 cups of crushed cornflakes mixed with 2 tablespoons of melted butter as your topping.
  • The versatility of this recipes really comes with the vegetables. You can saute onions, garlic, mushrooms, green beans, peas, etc. in butter or extra virgin olive oil before adding them to the mixture. (Or just add them raw and bake the casserole longer).
  • Also, substituting or mixing different types of shredded cheeses can add flavor. Try mozzerella, parmesan, or monterray jack.
