How to Bake Perfect Pumpkin Nut Bread

With Thanksgiving and Christmas near, it's time to turn those pumpkins into bread.

Instructions

Things You'll Need:

  • 2 cups Raw Pumpkin or can of pumpkin
  • 1 cup sugar white granulated
  • 1 cup brown sugar
  • 1/2 cup oil
  • 2 1/2 cup plain flour
  • 1/2 tea. salt
  • 1/2 tea. cinnamon
  • 1/2 tea.cloves
  • 1/2 tea.nutmeg
  • 2 tea. baking soda
  • 1 cup nuts, pecan or walnuts
  1. Step 1

    Gather all your ingredients together and get ready to turn that pumpkin into wonderful bread.
    Turn the oven to 350 degree and let it warm up while you mix.

  2. Step 2

    If you are using fresh pumpkin you will need to place it in a boiler with a little water to cook it down. Cut into small pieces so it cooks faster.
    You may also use canned pumpkin. You will need two cups of either fresh or canned pumpkin.

  3. Step 3

    After fresh pumpkin is cooked down you need to use the mixer to make it smooth. Just a few minutes will do it.
    To the pumpkin add all your other ingredients with the exception of the nuts. Mix well until smooth.

  4. Step 4

    Using a wooden spoon fold in your nuts. You can use the mixer but if your pieces are large they will get caught up in the beaters.

    Grease your loaf pan and pour in the batter.
    Bake at 350 for about one hour. Use a toothpick to check if it's done. Insert the toothpick into the bread and if it comes out clean it's ready. Bread should be a beautiful golden brown and pulled away a bit from the sides of the pan.

  5. Step 5

    This bread freezes wonderfully and also makes great toast. My children love it toasted with a bit of butter or cream cheese on top.
    Baking and giving this bread for holiday gifts is a tradition in my home. I hope you will enjoy it.

Tips & Warnings
  • Fall is a great time to cut up and cook down pumpkins after Halloween. Store plenty in the freezer to use for this bread year round.
  • Make the best use of your oven heat by baking several loafs at the same time. This pumpkin bread freezes well and can be sliced and toasted for breakfast and quick snacks.
