If you have had it in a restaurant and liked it, then you'll love the authentic dish! If you've had it made by a cajun - good for you! Every cajun makes dirty rice and gumbo in their own way - here's my clan's take on it!

Instructions

Things You'll Need:

  • 2 cups rice
  • 1 bell pepper
  • 3 bundles green onion
  • gumbo file pronounced fee-lay)(your store will have it in the aisle for seasonings)
  • 1 lb roll of generic spicy (HOT) sausage (no sweetness added - Jimmy Dean and Owens have sweetness, don't use these!)
  • 1 stick real butter
  1. Step 1

    First, Begin cooking the extra long grain rice. Chop onion and bell pepper. Sprinkle gumbo file over mixture, approximately one tablespoon will do. Sautee all in butter until they are soft and start to scortch.

  2. Step 2

    Next, add the roll of sausage to the skillet. Don't drain the butter before adding sausage. Break up sausage as you mix it in with vegatables while it is sauteeing over medium-high heat. Cook until sausage is thoroughly cooked.

  3. Step 3

    Put mixture into food processor and blend for roughly 10 seconds. Once rice is ready, mix blended mixture into rice by turning it into rice.

    It doesn't take long to make, and makes a great meal by itself or a side dish!

Tips & Warnings
  • Some people like to use dirty rice under gumbo instead of plain white rice
  • Using a rice cooker is a GREAT way to ensure your rice is perfect every time! And they are only about $20 from places like Wal-Mart
