Things You'll Need:
- Heavy Cream
- Parmesean Cheese
- Romano Cheese
- Gorganzola Cheese
- Your favorite pasta

Step 1
Put the heavy cream into a 2 quart sauce pan over low to medium heat. You do not want it to boil, just heat slowly until the top forms a layer. It is important to keep stirring the cream so it doesn't burn. This is when I like to add a little salt and pepper.

Step 2
Once it starts to thicken, slowly start adding the Romano and Parmesean cheeses, continually stirring the mix. The cheese should be added slowly enough that it melts completely before adding more. The sauce should start to thicken more. It is hot so don't forget that it will thicken more once it cools, if you add to much cheese you can thin it out with more cream.

Add the gorganzola to the sauce last. For those that don't know it is a very strong blue cheese so you will not need much of it. It does however add a wonderful flavor to the sauce. Stir this in slowly until it melts completely.

Now let the suace cool a little and pour it over your favorite pasta and enjoy!
