You don't have to go to the deli to have macaroni salad. It came be made at home whenever you want it.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 lb elbow macaroni
  • 1 1/2 cups mayonaise
  • 1 cup plain yogurt
  • 1/4 cup cider vinegar
  • 2 tbsp mustard
  • 2 tbsp sugar
  • 1 tsp each salt and pepper
  • 1 1/2 cups sliced celery
  • 1 cup shredded carrot
  • 1 1/2 cups chopped sweet red pepper
  • 1/2 cup green onion
  • 1/4 cup chopped fresh parsley
  1. Step 1

    Cook your pasta and rinse with cold water and drain and set aside

  2. Step 2

    Now in a large bowl add your mayonnaise

  3. Step 3

    And then stir in the yogurt

  4. Step 4

    And the vinegar mix in well

  5. Step 5

    Now mix in the mustard and sugar well

  6. Step 6

    Stir this all together with the cooled pasta well

  7. Step 7

    Mix in the salt and pepper

  8. Step 8

    And all the peppers and the celery, mix that in well

  9. Step 9

    And the shredded carrots

  10. Step 10

    Now the onion and parsley mix that in

  11. Step 11

    Refrigerate that covered and when cold mix well before serving

Tips & Warnings
  • you can use thinly sliced radishes instead of carrots
  • And you can use white vinegar instead of cider
  • And you can use green bell pepper instead of red
