This is a tasty stew for all the oyster lovers.

Instructions

Things You'll Need:

  • 2 tablespoons butter
  • 1/3 cup finely chopped celery
  • 2 1/2 cups milk
  • 2 tablespoons fine cracker crumbs
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 pint oysters
  • 2 tablespoons parsley and green onions chopped for garnish
  1. Step 1

    Sauté celery in butter until celery is tender.

    In a double boiler, heat the milk and crumbs.

    To the milk, add the juice from the oysters, salt, pepper, and cooked celery.

  2. Step 2

    Reheat the milk.

    When the milk is again hot, add the oysters.

    Cook only until the oysters are plump and the edges begin to curl.

  3. Step 3

    Serve.

    Garnish with parsley and green onions.

    Enjoy.
