How to Make A Light, Easy Soufflé.

A soufflé serves equally well for lunch or dinner. This one is good, cheesy, and delicious.

Instructions

Things You'll Need:

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 teaspoons dry mustard
  • 1 1/4 cup milk, heated
  • 6 eggs, separated
  • 1 1/2 cups cheddar cheese, medium or sharp, grated
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon cayenne
  1. Step 1

    Heat oven to 375 degrees.

    Butter soufflé dish.

  2. Step 2

    In a heavy saucepan, over low heat, melt the butter.

    Gradually stir in the flour and dry mustard.

    Beating constantly, very gradually add the milk.

    Stirring constantly, cook until mixture is thickened.

    Remove from heat.

  3. Step 3

    Beat the egg yolks just until they begin to thicken.

    Pour the flour mixture into a bowl and, beating it constantly, gradually add the beaten egg yolks. Stir in the cheese, salt, pepper, and cayenne. Set aside.

  4. Step 4

    Beat the egg whites until stiff.

    FOLD the egg whites into the flour mixture.

    Pour the mixture into the buttered soufflé dish.

    Bake for approximately 40 minutes.

    Serve immediately. Enjoy!
