How to Make Honey Glazed Cornish Game Hens for Thanksgiving

Those who love to entertain often look for something special to serve in order to set their Thanksgiving meal apart from the everyday norm. One excellent dish to accomplish that is with stuffed Cornish game hens. However, why not take the dish even a step further by accenting it with an amazingly delicious honey glaze. Below is a recipe for honey glazed Cornish game hens--a dish perfect for Thanksgiving or any other special occasion Does this Spark an idea?

Things You'll Need

  • 4 Cornish game hens
  • 1 box fresh mushrooms
  • 1 cup of wild rice
  • 1 small yellow onion
  • ¼ cup vegetable broth
  • ¾ stick of butter
  • 1 bottle sugar free honey
  • ¼ cup lemon juice
  • ¼ cup chopped pecans
  • 1 tsp. season-all salt
  • ½ tsp. season-all pepper
  • ¼ tsp. of garlic
  • Spray cooking oil
  • Baking pan
  • Tin foil
  • Oven
  • Magic Bullet, blender, or food processor

Instructions

      Preheat the oven to 375 degrees. While the oven is heating, thaw, clean and prepare the Cornish game hen for stuffing.

      In ½ cup of butter, cook the onion until it is soft, but not yet turning brown. Add to the mixture the pecans, rice and vegetable broth. Blend well, cooking the mixture for about 15 minutes or until the rice stars to fluff. Stir in the mushrooms.

      Using the stuffing mixture, stuff the Cornish hens carefully. Do not over stuff.

      Melt the remaining ¼ cup of butter. Mix in the lemon juice, honey, garlic salt and remaining Season-All ingredients. Blend together well in the Magic Bullet or a food processor or blender.

      Cover a baking pan with tin foil. Spray the pan with cooking oil. Place the stuffed hens, breast up, on the pan. Season them with a splash of Season-All salt and pepper.

      Brush the top of the hens with the honey butter mixture. Cover them with a tent made from tinfoil and put them in the oven for about one and one-half hours or until very tender.

      Every 15 minutes pull the hens out and brush on more of the honey glaze. Be generous with each portion, using the entire mixture by the last basting. During the last 30-minute cycle, remove the tinfoil to allow the breasts to become golden.

      Remove the hens from the oven and pull just a hint of the stuffing out of the socket if it hasn't spilled out normally. Place the hens on a separate plate and serve immediately.

Tips & Warnings

  • Add extra seasonings of your choice to the rice mixture or the honey glaze.

  • Substitute almonds for pecans for a slightly different taste and texture.

  • Do not overcook the the hens or they will be tough.

  • Do not overcook the hens as poultry carries bacteria that can be dangerous if it isn't handled properly.
