Anyone that is gluten free probably depends heavily on potatoes, I know I do. I'm also dairy free, which is common for people that have gone for most of their lives without knowing that they have celiac's disease. Dairy free mashed potatoes can be tricky, you are probably used to eating them full of butter and cream, but this recipe will have you licking your lamb chops!

Instructions

Things You'll Need:

  • 5lb bag of Red Bliss potatoes
  • Helman's Mayonnaise
  • Olive oil
  • 3-4 cloves of garlic
  • Fresh Rosemary
  1. Step 1

    Like anyone that has made mashed potatoes, the process is very similar. This recipe makes a lot of mashed potatoes (I only know how to cook for a lot! - this amount would be great for a dinner party, cut the recipe back if necessary -- I usually plan on 2-3 potatoes per person dependent on the size of the potatoes.) Cut potatoes in half or in quarters and place in large pot with garlic cloves.

    Fill pot with water, just enough to cover the potatoes. Salt water and bring to a rapid boil.

  2. Step 2

    Allow potatoes to boil until they are tender, do not overcook.
    Drain water from potatoes.

  3. Step 3

    Mash potatoes with a potato masher. The boiled garlic should be mashed as well, it will mix in. Add 2-3 tbs of Helman's mayonnaise. Amount may need to be adjusted dependent on the size of the potatoes. Add 2-3 tbs. of olive oil.
    Mash away!

  4. Step 4

    Finely chop 3-4 tbs of fresh rosemary and add to potatoes. Fold in. Potatoes should be smooth but not soupy.

  5. Step 5

    Add salt and pepper to taste. I frequently use Sea Salt as I believe it to be healthier, fresh ground pepper works well too!

  6. Step 6

    Enjoy!

  • Roast Chicken
  • Pork Tenderloin
  • Lamb
  • Steak
  • Or even by themselves!
  • Experiment by adding different herbs, or horseradish to give your mashed potatoes a different flavor!
  • Overcooking the potatoes can result in a soupy mess!, The knife should come out cleanly from the potatoes without them falling apart.
  • These can easily be reheated, if dry add a bit more olive oil over low heat.
