How to Make Greek Spinach Pie (Spanakopita)

Spinach Pie or as the Greeks would say Spanakopita. This is my husbands Grandfather's version. Papou owned several restaurants in New York city & on the New Jersey sea shore. We feel very blessed that we have some of Papou's recipes. Depending on what region of Greece your family is from dictates how you make Spinach Pie. My friends could not believe that my children would eat spinach pie. Then she tasted it and loved it. This is also a healthy dish the spinach and olive oil are so good for you.

Instructions

Things You'll Need:

  • 1/2 cup olive oil
  • 3/4 cup butter
  • large onion, chopped
  • Frozen spinach 2-10oz pkgs thawed and squeezed dry
  • 4 eggs
  • 2 teaspoons dry dill or 2 tablespoons fresh dill
  • 12 oz feta cheese, crumbled
  • 1/4 cup Parmesean Cheese, grated
  • Phyloo (Filo) dough 20 sheets 9x14 or 1 pkg. defrost according to directions on box

  • pastry brush
  1. Step 1

    In a skillet melt 1 stick or 1/2cup of butter. Add onions and saute unitl the onions are clear.

    Next add 1/4 cup olive and spinach to skillet. Mix spinach and onions together and saute for about 5 minutes. Put the spinach mixture in a bowl and let it cool down

  3. Step 3
    Add the beaten eggs to  cool spinach mixture

    To the spinach mixture add 4 eggs beaten, 1 tablespoon of dill and combined together.

  4. Step 4
    Add the Feta cheese

    Next, add the 12 ounces of crumbled feta, 1/4 cup Parmesan cheese and blend to spinach mixture.

  5. Step 5

    Lay fillo dough on wax paper and cover with plastic wrap and damp paper towels. This will keep the dough from drying out. Uncover to remove fillo as needed then recover.

    Spread olive oil mixture out evenly

    Melt 4 tablespoons of butter. To the melted butter add 4 tablespoons olive oil. With a pastry brush on the bottom of your baking dish with the olive oi mixture. Next place one sheet of fillo in the baking dish. With the pastry brush lightly coat each layer with olive oil mixture. Repeat 6 times. (6 fillo sheet on bottom of baking pan)

  7. Step 7

    Thinly spread out 1/3 of the spinach mixture over the fillo dough. Next put 4 sheet of fillo over this layer of spinach. Lightly coat each layer with the butter mixture. Next spread out 1/3 of the spinach mixture and repeat the 4 sheets of fillo. Finally spread the remaining spinach mixture and top with 6 sheets of fillo again, lightly coat each layer with olive oil butter mixutre.

    Bake at 350 degrees for 25 to 30 minutes or until the fillo is golden brown and the filling is set. Check the spinach pie after 15 minutes of baking. All ovens cook differenly.

Tips & Warnings
  • I preefer the feta that is stored in the brine mixture. You can find it at you local grocery store deli or specialty store.
  • You can use all olive oil in place of the butter to make the dish very healthy.
