Indian chicken curries seem to be popular all over the world. Every region in India has there own version of chicken curry. This is from North India. A quick and simple chicken curry recipe, low in fat but high in taste. This medium curry goes great with the Spinach Pilau and a dollop of mango chutney. The aromas and flavors are a delight to the senses! It is best served with fresh Naan bread and Jasmine or Basmati rice.

Instructions

Things You'll Need:

  • 1 1/2 lbs chicken meat
  • 2 medium sized onions, thinly sliced
  • 5 tbsp. frying oil
  • 1/4 tsp garlic powder
  • 1 tbsp coriander seeds
  • 1 tbsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 tsp ground ginger
  • 1 tbsp chili powder
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 500 ml boiling water
  • 4 medium sized tomatoes.
  • One sharp knife
  • One cutting board
  • One large pan
  • One large wooden spoon
  • Measuring cups
  • Measuring spoons
  1. Step 1

    Make the ingredients and spices be prepared well ahead so that they will be ready to put in the pan when the oil is hot.

  2. Step 2

    First of all, partially cook chicken; cut in bite size pieces. Cut the tomatoes to small size pieces with sharp knife.

  3. Step 3

    In a large pan suitable for frying put 5 tbsp. of oil in and heat it on a high temperature. Fry onions in oil until they are golden brown.

  4. Step 4

    Mix garlic powder, coriander seed, ground cumin, turmeric, ginger, chili powder, black pepper and salt. Add the spice mixture to the pan, fry spices with onions for 1 minute.

  5. Step 5

    Add chicken and stir together for 1 minute. Add tomatoes. Cook for 2 minutes.

  6. Step 6

    Pour sufficient boiled water in pan to cover the meat. Bring to boil, cover and slowly simmer for 45 minutes then uncover and cook slowly until meat is fork tender. Stir occasionally to prevent sticking.Serve hot.

Tips & Warnings
  • Traditionally, chicken is cut into comparitively smaller pieces for this recipe
  • Serve hot with: Green Peas Rice (Matar Pulav), white rice or Indian bread (Roti).
  • cucumber Raita, or any vegetable dish also could be taken with.
