How to Make An Easy And Delicious Pumpkin Stew.

This is a stew that has been a delicious addition to the Halloween season for many years. I hope you enjoy it too.

Instructions

Things You'll Need:

  • 2 pounds of lean stewing beef
  • 1/2 cup flour
  • 3/4 teaspoon salt
  • 3/4 teaspoons pepper
  • 3 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, chopped
  • 4 carotts, diced
  • 4 ribs of celery, diced
  • 4 cups of beef broth or broth of your choice
  • 2 bay leaves
  • 1 teaspoon thyme
  • 3 1/2 cups pumpkin, in 1 inch cubes
  1. Step 1

    Shake the flour, salt, and pepper together in a plastic bag.

    In a large soup pot, heat the oil.

    Shake the meat, a few pieces at a time, in the flour mixture to coat.

  2. Step 2

    Place the meat in the hot oil and brown well on all sides.

    Add the onion and garlic and cook to blend.

    Add all the remaining ingredients, except the pumpkin.

  3. Step 3

    Bring mixture to a slow boil, stirring occasionally.

    Cover stew and simmer gently for 1 1/2 hours or until meat is tender.

    Add the pumpkin to the stew and cook for approximately 20 minutes or until pumpkin is soft.

    Adjust flavourings. Serve. Enjoy!
