Things You'll Need:
- 1 cup whole-wheat flour
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup plain or vanilla yogurt
- 1/4 cup orange juice
- 1/4 cup melted butter
- 2 egg
- 1 1/2 cups whole cranberries
- 1/4 cup more granulated sugar
- 1 tablespoon grated orange rind

Step 1
Heat oven to 400 degrees.
Butter muffin pans. Mix together the final 1/4 cup of sugar and the grated orange rind. Set aside. -
Step 2
Blend together the flours, sugar, baking powder, baking soda, salt and cinnamon.
In a smaller bowl, blend together the yogurt, orange juice, melted butter and eggs. Stir in cranberries. -
Step 3
Add the yogurt mixture, all at once, to the flour mixture.
Stir ONLY until wet ingredients are moist.
Twelve rounds should be enough. -
Step 4
Spoon batter into prepared pans.
Bake for approximately 25 minutes or until firm.
Remove muffins from pan and cool on rack.
