How to Make Choconana Flax Muffins

This muffin recipe is dairy-, sugar-, and wheat-free and full of healthy ingredients. Sound awful? Guess again. These tasty treats will have everyone asking for seconds. Yields one dozen.

Instructions

Things You'll Need:

  • 3/4 cup heart-healthy margarine (Smart Balance - not the light variety - works great)
  • 1/3 cup natural sweetener, such as Stevia or Xyletol
  • 1/4 cup Egg-beaters or other egg-white product
  • 1 tbsp pure vanilla extract
  • 2 ripe bananas, smashed
  • 1 cup oat flour
  • 1/2 cup brown rice flour
  • 1/2 cup flax meal
  • 2 tbsp cocao powder, unsweetened
  • 1 tbsp baking powder
  1. Step 1

    Cream margarine and sweetener together until light and fluffy. Add egg, vanilla, and bananas, and mix thoroughly. If the mixture appears to separate, that's okay. Add the dry ingredients and mix until blended.

  2. Step 2

    Spread margarine in the cups of a 12-count non-stick muffin tin, and dust cups evenly with flour. Tap excess flour out of cups. Spoon the batter evenly into the cups (about 3/4 full). Sprinkle each with a pinch of whole oats and a pinch of flax meal.

  3. Step 3

    Bake in preheated over at 350F for about 25 minutes. Test with a toothpick, and if the toothpick emerges clean and dry, the muffuns are done.

  4. Step 4

    Cool on a rack for about 15 minutes and remove muffins from tins. They should remove easily.
