Step 1
Wash a fresh eggplant and cut off the stem.

Make 4 deep slices lengthwise in the eggplant evenly spaced around; do not cut all the way to the center.

Place peeled and crushed garlic cloves (about 3 per slit) in lengthwise slits.

Brush eggplant with olive oil and sprinkle with salt.

Step 5
Wrap eggplant in foil and bake in preheated oven 350 degrees for 30 minutes, then open foil and bake till done; additional 15 minutes.
