Things You'll Need:

  • 2 cup basmati or other long grained white rice
  • 1 onion,
  • 1 tsp salt,
  • 1.5 tsp ginger,
  • 0.5 tsp ground cardamom,
  • 1.5 tsp garam masala (curry powder will do in a pinch)and
  • 1 cinnamon stic
  1. Step 1

    Chop onion and dip in water (or balsamic vinegar) until soft.

  2. Step 2

    In heated soybean oil saute onion add spices and brown slightly, then add rice and brown slightly, stirring (rice will become opaque).

  3. Step 3

    Add water, exactly twice the quantity of rice used. Bring to the boil, then turn to minimum and cover. Cook 12 minutes without opening the pot. Stir and serve.

  4. Step 4

    Any vegetables can be added to the rice after the water (peas, beans, carrots etc.).

Tips & Warnings
  • This is normally served with daal, raisins, and bananas.
  • You can add small numbers of roasted peanuts, fewer than 10 per person, with this.
  • Brown basmati rice can also be used. Use about two and a half times the water per unit rice. Increase cooking time to about half an hour.
