How to Make Veal Chops with Sherry and Lemon Marmalade

Veal has a wonderful texture and takes on flavors spectacularly. Veal is a food dish that must be experienced to appreciate the subtleties and pure pleasure of a perfectly cooked chop.

Instructions

Things You'll Need:

  • 4 Tbls. sweet butter
  • 2 Tbls. vegetable oil
  • 4 loin veal chops, 1" inch thick
  • salt & pepper to taste
  • 1/3 cup yellow onions, finely chopped
  • 1/3 cup good quality medium-dry sherry
  • 1/3 cup chicken stock
  • 2 Tbls. lemon marmalade
  • 1/4 cup heavy cream
  1. Step 1

    Season veal chops with salt and pepper. Heat skillet to medium high heat add oil and butter. Let the butter melt then add the veal chops( you may need to increase the heat temporarily to adjust for the veal then lower it as the veal sizzles)brown both sides of the chops to a golden color.

  2. Step 2

    Meanwhile preheat oven to 200 degrees F. Reduce the heat in the skillet and cook until chops are slightly underdone and still juicy. Remove the chops from the skillet and keep warm in oven while making the sauce.

  3. Step 3

    Add the onions to the oil and butter remaining in the skillet and cook covered, over medium heat until tender,about 15 minutes.

  4. Step 4

    Add the sherry,stock, and marmalade to the skillet and bring to a boil, stirring up any browned bits in the skillet. When the mixture is reduced to about one third(1/3), whisk in the heavy cream and simmer for another (5)minutes. Taste sauce and season with salt & pepper if necessary.

  5. Step 5

    Transfer the veal chops to a heated serving plate(can use a microwave to heat the plate first) and spoon some of the sauce over them. Place remaining sauce in a serving dish(gravy bowl). Good food, good wine, and good friends make this dish a treat for all to enjoy!

  • Serve with a salad
  • Serve with rice or potatoes
  • Serve with your favorite vegetables
  • A good red wine goes well with this dish.
